Rib of beef question

Hi,

Its just me and the Mrs for xmas dinner this year and we have got a rib of beef to cook, I'm happy cooking it no probs but as its quite slim I don't think its going to stand up in the roasting tray.

Would it make any difference if it was laid down flat?

Same for us tomorrow, have you thought about propping it up either side with a couple of large onions?

Or even for the engineer, make a couple of braces out of a couple of metal coat hangers. smile

If you lay it down in the tray then it may cook more quickly on the side which is in contact with it.

If you're browning it before then my advice would be to do so and then lay it on a trivet of root veg so as not to overcook or cook unevenly.

Just remember to rest it for a minimum or 30 minutes. I know it sounds excessive but you'll see the benefit once you cut in to it.

buy a 3 or 5 rib they stand up perfectly !
Getting nervous now as thats my job for tomorrow 6.6 KG 5 rib roast 2.30 pm serve!

oh no really feeling the pressure now have to learnto upload pics too!
Today i boiled and roasted an 5kg gammon and a pork belly slow roasted
Tomorrow pork belly and the beef!

Had beef rib last year.

This year is bone-in pork loin (chine bone removed), French trimmed (need to do this myself in the morning), with diamond scored crackling.
