What are you stuffing your bird with this year?

Of course I'm talking about stuffings, for your Turkey, goose or whatever you may be serving this Sunday.
In our house, my brother always has to cook his infamous Chestnut Stuffing.
This involves mixing chestnuts, some cheap pate, breadcrumbs and a few herbs into a sticky mixture which gets inserted into the rear end of our Turkey just before roasting.
Its not bad at all to be honest once roasted for a 5 hrs, but I feel its time for a change.
Given we have 2 birds on the table this year, I have the opportunity of creating a new Chestnut stuffing, which may just have to be more tasty than the usual fare. No sibling rivalry here, just looking for something new and yummy to serve the family.
So, ideas please - but it has to include chestnuts in large quantities.
