Any idea's what to do with this?

Got this from a friend for a resonable price but it has turned out bigger than i imagined.


i am sure it is going to be way to much for 6 adults and 1 kid but never mind.


any idea's on how to cook/prepare/stuff/tie etc for a awesome boxing day lunch?

Stuff it with chestnut and apricot stuffing then drape some streaky bacon over the outside before stringing it together.

This I think.

The joint will need a lot of bacon since it doesn't have a lot of protective skin to keep the juices in.

I'd also suggest roasting it skin side down for the first half of cooking.
