For a Santoku, if you don't mind stumping up a bit extra, it's gotta be Shun.

or if you're feeling a bit more flash, Premier Line

The hand hammered finish has the same effect as the scalloping on other Santokus. Fabulous knives, really enjoy using them.

Think they start around the low 100s, and as usual much cheaper in the States if you have a way to get them over. There are actually many excellent Japanese knives in that price bracket, but for treating oneself the Shuns definitely have a certain wow factor. smile

The ones up there ^^^ are bloody lovely, but a bit more than I can justify if Im honest. Ive seen the Global around £75ish and the Wusthoff the same. If if I had more dollar, I would buy the top one.

Sort of on topic, are these fluted for less surface area sticking
to foods like cheese, so you cut and the food falls away more easily,
rather than sticking to the knife. Thanks.
