I am in charge of 'other' Christmas puddings. I don't want it too heavy after a big main course. I would like to prepare a few days in advance and I have to transport. Any suggestions and recipes? 12 Adults and 6 kids under 5. I could do 2 types of pudding, and also have ramekins if needed...

Aussie Christmas pud.

400g of mixed christmassy dried fruits.
Soak in Brandy / rum / amaretto for a week. Just cover the fruit and possibly feed it a bit.
Mix with 1litre of chocolate or vanilla ice cream. (slightly softened)
Place in a pyrex bowl.
Refreeze.

Winter fruit salad:

Assemble some dried fruit - a good mix should include things like apple rings, apricots, peaches, pears, prunes, figs, dates etc.

Add some dried cranberries to the mix - sour cherries if you can get them.

Pack everything into a large jar with a couple of cinnamon sticks and half a dozen cloves.

Top up with red vermouth and steep for a few weeks, adding more vermouth as the fruit absorbs it. A lovely syrup will form.

Serve at room temperature with double cream.

I'm in charge of other desserts too.

I was hoping to make individual lemon mousse with raspberry coulis and a ginger brandy snap "tuille" biscuit. Then realised there was no chance of transporting them. Back to the drawing board ...
