A Christmas challenge

OK all of you foodies here is a challenge for you.....
Its Christmas soon (as you all know
) BUT instead of turkey, goose or whatever you do what would you prepare for Christmas dinner if the main guest of honour was a strict vegetarian (not vegan so eats cheese, eggs, milk etc) and you were preparing a completely vegetarian meal (3 courses) for everyone that is special enough?

My mother for years cooked my ex wife individual veggie meals and got roundly slagged off for taking the trouble, so didn't bother in the end, just bought some crappy tv dinner.

A good nut roast as a main. Pretty difficult to get a good recipe as they normally end up too dry or too heavy. Try cashew nuts and hazelnuts as main part, with onions and breadcrumbs too. Could probably find you a recipe if you are interested.Its Christmas soon (as you all know

Desert is easy for vegetarians; just have what everyone else is, not so easy for vegans. If this person is really strict, check that any dairy content is actually vegetarian, I guess.
