Making a chinese tonight, and it's my first foray into the art of noodles.
Presume it isn't too difficult, boil first then fry?

Anyone have any tips at all?

Cheers.
Mike.

I never boil my noodles as it seems to make them sticky. Instead I cover them in hot water and leave them to soften. Drain well then straight into the hot wok you've used to cook the meat/veg in.

Are you planning to do wet or dry chow mein? i.e: Takeaway style is often 'gravy' based dish with beansprouts etc, but asian street food is often a drier dish of stir fried noodles.

I buy already soft 'straight to wok' noodles.

fry your noodles with a little light soy, dark soy, chinese 5 spice, groundnut oil, sesame oil & perhaps some oyster sauce smile

Thanks folks, top suggestions..

I'm going for the chopped pepper, celery, onion, all cooked in butter initially, then thickening agent when that's boiled up, in goes the chicken, soy sauce, bean sprouts and veg to finish.

Nice and easy does it I reckon..

Bit late now, but if you add a little Oyster Sauce it makes the world of difference.

Possibly a stupid question, but how do you mix chow mein properly? Every time I've tried I end up with a bundle of noodles sitting in a puddle of other ingredients. It hasn't mixed through properly.

Ideas? Is it simply 'mix more'?

Add the noodles a little at a time mixing between each addition.
