Gluten and Wheat Free diets? Not sure where to turn to?

Hi everyone
I realise this might look like an advert of sorts for my mum's business, and to a lesser or certain extent it is, but over the last 8 years my mum has perfected her gluten and wheat-free recipes (me and my sister as chief taste-testers!) and has been selling her cakes and pies etc etc at local markets in Devon and Cornwall where she lives.
Last week she secured a significant sum of money to take her ideas onto a national scale.
Anyway I've been telling all my work colleagues and friends this news (it's great news for her - she's been trying to find the mum and do this for a long time plus I think she's a great cook and what's taken the time has been perfecting the pastry element and how to devise a way to turn out consistent quality pastry on a larger scale without losing that homemade quality about them) and the number of people whom have come back to me and said either a) I suffer from x,y and z and therefore need to eat gluten- or wheat-free food or b) one of their elderly parents/grand parents needs to has been astonishing.
So; if you or someone you know is struggling to adjust or cook for themselves in a gluten and wheat free fashion or find supermarket grade food that is wheat-free and gluten-free please do get in touch and I'll pass you onto my mum. We're busy setting up a website (glutenfreegranny.co.uk) for the new year year and I've told mum she should write a book of recipes etc etc.
Mods; if this too advertisy (is that a word?) then please do let me know and I'll edit it. I guess I've become a little evangelical about this and I want to spread the word but I don't want to break the rules.
She already supplies a couple of care homes in Devon and Garden centres - we just know there's more demand (especially from the elderly whom tend to suffer from wheat intolerance) - it's just getting the word out there that there is an alternative and a solution.

I'd suggest she packages a product offering of, say, a fortnightly gluten-free box delivered to the door. Along the lines of Riverford Organics, but with the facility to give this as a gift.
IE. A forecastable revenue stream offering convenience for the end consumer who might have restricted mobility, and peace of mind for the relatives that grannie will be eating properly.
Perhaps opportunities exist to tap into a complementary local delivery service to handle the distribution side, or sell delivery franchises.
A facility to send a gluten-free cake for birthdays / Christmas also strikes me as a no-brainer.

Mum already offers mail order (delivered in refrigerated van/lorry) and we're going to extend that through the website.
I'm also keen to see her expand her offering to more care homes so am busy approaching some national chains.
