Coprinus comatus, or shaggy ink cap. Also known as the lawyer's wig. These are edible and good when at the 'drumstick' stage, with all gills white. They're still edible after that, but disappear into a grey mush when cooking.
I'd fry them in butter with a bit of crushed garlic and serve on toast with some chopped dill or parsley.

Many thanks Mobile Chicane, sometime soon I hope to come accross a mushroom that I CAN eat other than in a supermarket.
I think your best bet would be to go out with someone who can show you the species which are best to eat and absolutely unmistakeable.Lots of these types of bods around due to the ever-increasing popularity of foraging.
If you do decide to eat the inkcaps, don't have a glass of wine (or any other alcohol) with the meal or for a few hours before or afterwards. They contain disulfiram which is the active constituent in the drug given to alcoholics to stop them drinking. The side effects can be most unpleasant though not fatal.
