The wife and I have been to Morocco several times and cook a lot of Moroccan food at home. This is the most authentic recipe we have found for Lamb yet. Finding sweet smoked paprika can be a bit tricky though. You can get away with hot smoked paprika... just.

el ras hanout (SP) paste is a good spice to marinade or tagine with.

Ras al hanout varies hugely depending who made it. It's like "curry paste" no two are quite the same. The recipe above is the best Mergeuz recipe I've found yet.

Cheers guys. Any recommendations for starter dishes? Was thinking lamb kebabs and maybe "Harissa" and lime chicken??

As it happens I'm knocking up this for dinner... not the most authentic but dead easy and quick.

That's a whole load of lamb!

Personally I'd go for chicken kebabs marinated in olive oil, lemon, garlic, chilli and thyme; and/or huge freshwater prawns, barbecued in their shells and then served with a harissa mayonnaise.

As an accompaniment to the main lamb, I'd suggest cinnamon-scented couscous with sultanas and toasted pine nuts. Also a salad comprised of grated carrot with a splash of orange/pink grapefruit juice over, a few drops of orangeflower water, and some salt.

Sliced sweet oranges with freshly-ground cinnamon wafted over for a simple (yet stunning) dessert.

To keep it on theme, look up some recipes for "Moroccan salads" it's a variety of small starter dishes served together in a tapas/meze stylee.
