I'm not sure if it's been done before, nor whether it'll prove a popular idea - but I thought it'd be a good idea if, much like the BBQ thread, we had a nice big repository of sandwich excellence.

So, hot or cold, simple or complex, chuck your ideas, recipes and pictures in this thread. smile

As is the time honoured fashion, as the OP I'll get us started smile

Today I made a cajun chicken breast with bacon and BBQ sauce with caramelised onions and a jalepeno mayo. Dead easy, and super tasty (apologies for the lack of pics this time round)


- Dry rub a chicken breast with a cajun spice rub (I used one from the US, not wildly different to the little jars you get in Tesco really).
- Grill for 10-15 minutes on a moderate heat. Also grill a couple of rashers of bacon.
- At the same time sauté / sweat some onions in a little butter, add a teaspoon of brown sugar, a splash of worcester sauce and some finely chopped jalepenos. I think a splash of balsamic would work well too but I couldn't be bothered.
- When the chicken breast is grilled, give it 20-30 seconds a side in the pan you cooked the onions in, same butter. It imparts a lovely taste and gives the chicken breast a bit more of a crust.
- Make a super quick mayo - couple of spoons of hellman's, some finely chopped chilis (I used Jalepenos), a splash of tabasco and a crushed garlic clove.
- To assemble, a nice ciabatta, spread the mayo on top and some lettuce. On the bottom start with your onions, slice the chicken breast and layer it. Add some strips of bacon and drizzle with the BBQ sauce of your choice (I had HP spicy BBQ to hand, worked v. well).

Made for a surprisingly lovely sandwich, smokey, slightly sweet but tangy too - well worth the 15 minutes or so it took and it kept well enough to enjoy another a few hrs later.

nice quick scummy one:

lot of ham
lot of mature cheddar/similar
lot of mustard on one side
lot of that waistline salad cream crap on the other
SALT AND VINEGAR CRISPS. (thai chili also acceptable)

extra points for salami in there as well.

Get one of those part baked baguettes, bake until done.

while thats cooking, fry off 2 sausages and butterfly them (done bother using larger sausages as they wont fit)

grill some streaky bacon until the fat is crispy, this is important and to use the grill, as if using the frying pan the bacon meat will go crispy aswell and thats not what were are after.

grate some cheese and layer ontop of the bacon (thats why we use the grill) and then grill till the cheese has melted onto the bacon.

combine all items with a bit of tomato sauce and enjoy smile

Pastrami, sliced dill pickle, american mustard. Bread of choice.

Or

Salami Napoli (the one with green peppercorns in), grated mature cheddar, slathered with some proprietary tomato relish. Bread of choice.

Soft White bread, Butter, Bacon (optional brown sauce)

Bread,butter, Honey roast ham and Mature cheddar cheese

White bread, butter, Birdseye Fish Fingers and Tomato sauce

Crusty roll, Sweet Chilli, Mayonaise, Red/Green peppers, Cooked Chicken breast

Soft white bread, Butter, Tinned tuna (drained), Mayonaise, Salt, and Pepper

I enjoy all breads and usually go for the tasty thick seeded brown varieties, but sometimes there is nothing nicer than a few slices of soft, cheap white processed bread, filled with hot crispy bacon in a simple ketchup and mayo spread lick
