A poor running ALFA?

I hope someone can help as I have a bit of a problem;
I have a sprint with a 16 valve from a 33. The installation was carried out by the previous owner. When I got the car it seemed to have a flat spot around the 3000-4000 rpm mark. I had a similar problem with a P4 a several years ago and it was down to the airflow metre. Since the AFM on the sprint had obviously been apart I assumed this was the problem. So I bought a second hand AFM (which hadn't been tampered with). Having fitted the "new" afm the problem disappeared, but now the car runs very poorly from cold until it warms up.
A friend had a similar issue with a 16v 33 and it turned out to be a water temperature sensor, but I wanted to get a few ideas before I waded in and started buying parts.
Any advice would be apreciated.

Hi Rob, The reason the AFM had been opened up was to richen it up slightly to help get rid of the usual 16v jerky on off throttle and to try and compensate for the better airflow through the K&N and sports freeflow exhaust. I would change the blue ecu temp sender first as thats usually the trouble with cold running on them. Might also be worth checking that the ISV is all nice and clean and isnt clogged up. Theres very little else to go wrong on them really. Hope this helps. Dave (Previous owner!).
