Lovely job! Just follow the master cylinders forward towards the engine and you will see the pushrods going to the base of the pedals. Undo the pushrods and take the big bolts out. Then go inside the car and lift your carpets. The pedals are mounted in an alloy triangular casting which should now pull up and away from the floor with a bit of jiggling. Whilst you've got the pedals out it would be worth checking the clevis pins which connect the pushrods as they wear, and you end up with slop in the pedals.
I had a problem getting the pedals out of my 2000 GTV with floor mounted pedals like the GTJ - couldn't find the bolts. It turns out a previous "restorer" had plated up the chassis rail that the pedal mounts sit in and had not bothered removing the bolts first so had plated over the bolts!! Hopefully you've only got underseal to get through..

There is also a metal clamp ring screwed into the floor pan which holds the rubber gator which needs to come out too. The aluminium casting may well have corroded itself into the chassis rail, given that it will have been sat in a moist environment for forty years, certainly the bolts could be stuck into the casting and need cutting off.
Are you sure you need to take it out?.
The only way I got mine out was to dismember the chassis rail!,!

thanks for the tips guys, surprisingly the bolts were all still there and visible under a layer of underseal, and the metal ring and gaiter came off with ease (although i need a new gaiter...) but part of the reason for taking it all out was the fit the new gaiter.
