Some dealers do although it isn't as straightforward as it used to be as many, if not all, seem to rely on online quotes now, although some might still be happy to discuss.
7-years seems to be an age that's now used for cheaper rates (used to be 3-years) and whilst it isn't always obvious the rates are automatically adjusted when you request an online quote - well, that's how it was when I last checked.

Try doing a service request through the MyService site https://www.mymercedesservice.co.uk and select different dealers. Inchcape group dealers (ie Cheshire Oaks, but there are others around the country) used to discount labour by 50%. They used to be up for a haggle but last time I went there I was referred to the website, but, to be fair, it did offer a B service for £249.
Some dealers have a sort of loyalty club.
Snag these days is you're often talking to a call centre and they have no interest in discussing price.
I took my old C Class to Chester (the dealer then moved to Cheshire Oaks) until it was 12. They always looked after it OK and would negotiate on pricing. But the last time I took it they tore the car apart - I was presented with a list of work that was about the same value as the car. I was also oddly dealt with - they didn't tell me the car was ready until very late in the day but it was obvious the car had been standing for some time when I arrived. Then I was all but bundled out of the showroom!
Took the car to a well regarded local indie (tellingly there are 5 of them around the dealer) and the only thing that needed doing was a slight leak from the auto box, fixed with a £30 part, and I'm suspicious that happened as the dealer had overfilled the box after its last ATF change.

I think Mercedes do a value service for cars over a certain age. It is a lot cheaper than the full price but doesn’t give the Mobilo benefit and a few other niceties.

Interesting; that link just seems to take you to the standard booking portal, which goes back to my original comment/thoughts, ie it's calculated automatically. The difficulty as I see it is how do you know if the chosen dealer is a 'partcipating' dealer. Edit:

A while back I tried it with one of mine and a non-local, but not too far away, dealer came up cheaper quote than my local one. Not massively cheaper, though. I emailed them and queried the 7+ cheaper rates and was advised it's automatically caculated on the online system. The question then is, how do you know if you're getting a 'value' service or a normal one?
The value service looks to be an oil & filter change and some checks, much like an A service. Years ago some dealers offered the normal service but at reduced hourly rates and, say 10% off parts prices. Not sure they do that now as they all seem to gearing up for service-plans and online booking.

(The recovery is only to the nearest dealer, I think).Family member’s Mercedes wouldn’t start during the lockdown period. One call to Mobilo and it was collected, repaired by the dealer and returned the same day. (Repairs covered by warranty).
