Once I’ve run in my SL63 I’d like to look at increasing the performance by a decent amount. The engine seems to be quite under stressed, and apparently can manage quite a bit extra but can anyone recommend a company to do the work.

Celtic tuning offer a remap to 700bhp, but it’s not cheap, at about £1,300. Has anyone here used them, and are they recommended, or are there other firms that can offer a high quality product for less?

M157 engines can be remapped to give ridiculous power and torque outputs but there have been a number of cases of con-rod problems at higher levels of boost. There are Youtube vids by Tasos Moschatos which go into great detail about this. His accent is a bit heavy at times but you can get the gist.
For longevity, current thinking is to go for about 660bhp and less than 1000nm of torque but much more is available if you want to take a chance and have deep pockets. Torque limiters in lower gears are advisable to make the car more driveable and preserve the gearbox.
Does your car have a limited slip diff? If not, I'd advise getting one fitted before asking for more power. I have a '63 with Performance Pack, which includes an LSD, but it will still wriggle a bit under hard acceleration in the wet.
MSL are probably the best known tuners but GAD in Essex have an enthusiastic following too. Last time I checked, costs were much less than £1300 for a bespoke remap and dyno runs, not just a generic Celtic download.
As you mention "running the car in", I assume you have a new car and realise that you can kiss goodbye to any drivetrain warranty from Mercedes.

Thanks for the advice.

Yes, I understand that the warranty will be void, but that’s fine, I’m happy to take a chance. Much as I love the car it could do with a bit more “oomph” than it currently has, which ai think I’ll get from a faster throttle action and the boost coming in earlier, so I may try the place suggested in Essex which isn’t so far from me.

Thinking about it more, I’m tempted to see if changing pistons and con rods would let mecfreevup a bit more.
