E sim for abroad

Probably overthinking this but can anyone recommend an e-sim for abroad (Turkey) for data use while i'm out there on holiday? preferably one that is extremely easy to setup with no risk of your card being charged for hidden extras, going over etc.
Also can i leave my 2 physical sims in my phone and disable one for the e-sim to kick in? or do i have to remove 1 of them?
Finally is it as simple as just setting data usage to the e-sim and everything else to my main sim so i can still receive calls/texts as usual?

I used Airalo recently when I went to Jordan and Egypt
In Jordan it would never stay connected to the network for more than a few second so useless - luckily blagged it with wifi
In Egypt it worked fine but over 2 weeks the data charges cost way more than if I had just bought a local sim.
On my phone I had a slot for an E SIM so physical SIM was not relevant - they worked alongside each other.
The Airalo app does most of the setup for you. When I was in Jordan I did have to tweak some settings just to get it to connect.
I'd prob use again if I was travelling to multiple countries for short periods.
Make sure u turn data of on your home SIM as well.
Its also easy to top up within the Airalo app and no obvious danger of being overcharged, It shows your data usage as well.
