Fancy building a mini itx system to replace the ATX system I don't use
I keep getting tempted by the minisforum ar900i or bd790i boards with soldered CPU's
But issues with limited bios options and the fact it's a soldered CPU what if I want to upgrade! (I have never upgraded a CPU)
Surely I'd be better off going for separates but I don't really need a desktop CPU and lowest idle power usage is more key as I just leave it on all day while working
Any suggestions

You sound like me! I saw a video recently by ETA Prime, https://www.youtube.com/watch?v=0ypr8DxLKAE, showcasing a small form factor setup that looked mighty handy for portability, which I don't really need but I like the idea of. Would have been great for LAN parties back in the day.
Like you, I've historically always been one for drop in CPUs allowing for upgrades, yet the last time I bothered with just a CPU upgrade would have been back in the 486 days, so a soldered CPU doesn't feel as much of a problem to me these days. I think I personally will seriously consider something like the machine in the video above if/when I next come to spend the pennies, but for the time being I'm happy with my current laptop setup and no longer really use my base station that's connected to the TV.
Things have definitely moved on and provided the longevity and reliability is there in the soldered on chip, I don't see how it can be any worse than a lot of laptops that equally have the same architectural restrictions.
