Absolutely sick to death of Google Images.

Basically, I want to open up 'photos' and have the categorised. When I move a folder into an album, I want it to move from the main album onto the new listing so I know what I've moved.

Google doesn't do thos - instead I have 'Camera Images', 'WhatsApp images' 'All Images' etc - with a loaf of sub folders I've started but I've no idea where I'm upto with because the pics don't ever move out of the other folders.

Is there an alternative, which will take every image I have on my phone and allow me to store in albums?

Critically, can it have a generic 'uncategorized' album where all my new/unsorted pics will go?

Please help!

Yes, you can. But I'd be very careful. You don't necessarily need a load of rubbish from WhatsApp or Telegram also being backed up to your G Photos collection and taking up storage space and causing clutter.

Devices differ, but it's generally;
Open G Photos
Tap Library
Open the 'folder' you want
Tap on the Backup toggle at the top of the screen to backup that folder and have it auto backup in the future.

It's also possible to just choose a single image, or specific multiple images from within such folders and just back them up to your G Photos collection, so as your photos collection isn't filled with unwanted crap by using the auto backup feature.

Once the pictures are in your main uncategorised photos feed it's up to you to sort them into albums. They'll still be in the main feed obviously, but also in your chosen album(s). (A single photo can be in multiple albums for example, but it's still only 1 photo so only needs storage for 1 photo.)

I know apps dump stuff into folders, but my advice is to stop thinking in a folder structure, and instead think about your collection of albums and what photos you want in each album.

I really appreciate your response but I don't really understand - so I guess I want to re-ask.

Is there a photo storage app I can use which will move pics from the main feed into sub folders.

I hear what you are saying. Often it's confusing with the photos in the main feed not indicating if they belong in a folder too. But I've got used to it, simply because Google photos works so well in all other ways, particularly searching using image recognition.

You can do this with Google pics once they are uploaded onto the cloud, there is the main photo roll and then you can create subfolders.

I keep no pics at all on my actual phone.
