Win 11 'how to's' please:)

Hi guys & gals hope u can help me:-
Yesterday my wife bought an Asus vivobook 'go15 - model 1504g' to replace her ~10 year old Win7 Asus Notebook which she loved & used regularly.
The new laptop has windows 11 installed [which she or I have never used] when I try to load our purchased working programs onto the machine via an external dvd drive or USB stick, [coreldraw, MS Office, Canon eos software, FTM, and some games etc etc ] it tells me i need to get/buy these programs from online MS store - some of these progs are no longer available to buy and the others want me to re-buy or rent them monthly DUH !!- so how can I load/run my existing software on the laptop?? I get the message 'MS unorthorised app'
My initial thought was to put Win10 [ which all the progs run fine on] onto the laptop, however I cant get either a bootable ISO DVD or bootable Win 10 USB ISO to boot. I've tried getting to the initial boot up screen via [F12] to reset the boot order, somehow I can't get to the boot order screen either?
Any Ideas how to get this sorted?
I don't have to Install Win 10 - if you can suggest a method of how I can load the progs onto Win 11 that's OK toosmile

I don't dabble with Windows much these days, but sounds like yours is running in 'S' mode which only allows approved apps to be installed. You should be able to switch it to 'normal' Windows which will let you install other executables (but with the associated possible security risks) https://support.microsoft.com/en-us/windows/window...

Link works a treat - Windows 'S' mode - never heard of it, nor seen it mentioned within these kinda threads.
