Default gateway is the default route for the network to reach other networks. That could be other logical private networks you have configured or the internet.
In most home setups it will be your ISP router.
In Hyper-V it will depend on what type of network you are configuring and how that network talks to the outside world.

You may not want to run DHCP on your server but let the router do it.
I assume you have a Virtual Swtich set for your Hyper-V VMs? They will get an IP from your network.
Do you have more than one NIC in the server? Beware cutting yourself off from WAC when you run VMs with the wrong config if you have a single NIC.
