New Macs on Windows Server AD?

I know the M2 era macs can only rub windows through emulation, using parallels or VMware. However, can they still join windows AD networks? Either on Mac OS or through parallels? I can't find anything definitive.

The Apple OS is unaffected by the architecture underneath so if you have your machines joined to AD before then likely you won't have an issue after.

They can certainly still use SMB shares etc as mine is.

Depends on how far you want to go with the integration. Fundamentally it's built in and you don't need any extra bolt-ons.

I've got new Macs joined to a Windows domain. As said above it's native.

Group Policy etc doesn't apply, though, and I don't know if there's any options for this with Macs. I use MDM (Jumpcloud) to implement broadly equivalent restrictions, etc.

GP doesn't work, no, but Macs can be enrolled in Intune and have CA etc. policies applied

Intune works well at our place (at least as a user). We started on JAMF, then VMWare Workspace One and now Intune.

As above, there is built in functionality to add Macs to Microsoft AD but you will need an additional product if you want to use GP and other functionality. Something like Beyond Trust AD Bridge or similar.
