My wife and I have the same phones. Samsung Galaxy S8.

When hers is on charge, and reaches 100% the screen wakes up and stays awake until she unplugs it, at which point the 1 minute inactivity timeout kicks in.

My screen doesn't do that. Whe my phone reaches 100% the red led turns blue.

I can't find any differences in our settings, I use Nova Launcher and she doesn't, but surely there's a way to stop this happening on a 'standard' phone?

Think its called always on display or similar.

But it's not always on. Only when plugged in and at 100%. Otherwise the screen times out at 1 minute.

The launcher may be enough to interfere with things as you outline. Particularly on what are now slightly older versions of the android OS.

Eliminate the launcher as a possible cause by switching back to the Samsung default launcher, and go from there.
