They can have multiple bands or just one but however many it has you'll generally connect to the strongest or least congested signal. If there is carrier aggregation going on then you'll be connected to multiple bands at once.

The frequency’s that towers operate on are generally hardware dependent so not likely to change overnight.

However the frequency that your phone is allocated will depend on its strength, demand and capacity. This can change dynamically.
