I've just downloaded the Nest app so that both my girlfriend and I can use it.

She's already downloaded the app and can use it ok.

She's invited me to share through the google family, and that allows various things, but no sight of anything Nest related.

I can't tap into the thermostat directly and can't get the "key" required for the app as it's currently engaged with my gf's phone.

How can we get it so that either of us can control it?

She has to invite you directly from the Nest app.

I just logged into my account on my OH's phone.

You don't need to faff around with the family thing at all if you don't want to.

I use a dedicated account for smart stuff around the house. That way it can be signed into on multiple devices. But as it's only used for shared home stuff there's no concerns about emails, files, photos, etc being inadvertently accessed or posing a security risk.

Same, the house has a google account that I use for all the smart stuff. Can be logged in for anyone then.

When I moved out I just changed the password and gave it over to the new owners.
