Office365 E5 - Admin Question

If a computer has Outlook 'registered' to an Office365 E5 account, what activity and identification can be seen by the Administrator?

For example, what device information can they see?
If a new email account is added to Outlook, can the admin see which account was added? Can they see message information if the email account is not associated to the Office365 subscription? Etc

Is this a personal device connecting to work or a corporate device?

I’ll imagine they are using intune, this link will help

If you had to install or configure company portal then that covers it

It's a personal device and InTune is not being used.

Please tell me they are using some form of mdm?

If not, fill your boots

No MDM. I was involved with a company, I have left Office logged into their account for many months. I’d like to know what they have potential visibility of. The device is mine and always has been. I have been logged into all the main Office apps (Word, Excel, Outlook, PowerPoint). I’ve added new email accounts, I’m a bit worried that they can see the email addresses added etc.

They can’t but you should do the decent thing disconnect and get them to revoke your license

Done today. I have my own E5, but hadn’t noticed that this was signed into their account until today.

Your machine needs to be azure AD registered or domain joined for them to have any kinda of access to or control over your machine, or possibly a 3rd party mdm.
It may or may not have required you to do this as part of signing into outlook / office 365 depending on their polices.
Chances are if they haven't been paying enough attention to have kicked you off then they won't have setup any kind of MDM so will be fine.
