I have an Android phone, but Apple CarPlay works far better in my car than Android Auto.

I do have an old iPhone that I could leave plugged in in the car and use for the car apps, but then when I make a call through the car, it will go through the iPhone and not my actual phone.

Is there any way to use my sim in both phones, so they both have the same number etc?

You could set the android phone to forward calls to your iPhone, this could be enabled by a nfc tag in the car. You would need a separate sim for the iPhone and does seem a bit overly complicated.

lol, I think what you are wanting is SIM cloning.... I wonder why that might be illegal idea

Would this work? Switch on wifi on the old phone in the car, and turn on wifi hotspot on the phone with the sim. That way the old phone can access data for the apps, and the phone with the sim will be used for calls.
