Logitech G29 kit on PS5 - tips for beginner

I’ve just bought the Logitech G29 wheel, pedals and shifter for PS5 for some casual sim racing. I currently have GT7 and Assetto Corsa Competizione.
GT7 is fun although I personally find it lacks setup options for G29. It would be great if I can tune wheel sensitivity for example.
The brake pedal is also a bit hard and I find the manual shifter takes getting used to as I occasionally shift into wrong gear.
I also find it hard to control spinning out on the quicker cars, I am using clutch and manual shifter but the clutch doesn’t seem to be linear. It feels like on/off switch.
Assetto Corsa I’ve only bought yesterday as I fancy something different. It look at while to adjust the steering settings to get the right feel. However I cannot seem to use the manual shifter and clutch which is a shame, but I suppose that’s because all the cars in this game are paddle shifters. I also find that I need to restart the PS5 when switching games otherwise the G29 input doesn’t work correctly.
Is there any driving games on Ps5 which is similar to Forza? Something I would like to experience is free world driving.
I would also appreciate some tips please to get the most out of the setup. I am trying a few settings to make it as realistic as possible, but still a hit and miss.
