Very quick question...it seems there are loads of providers out there offering this course, and no single centralized coordinating body.

Has anyone worked with any good providers, focused really on something like Green Belt level and done as distance learning rather than in classroom delivery.

Doesn't a Green Belt accreditation require you to do a business project?

I've never done it (can't think of anything worse to be honest) but I've worked in 2 organisations that were training people up, and I was asked for input into "projects" that they were undertaking in both organisations to get their green belts.

Yes there is a theory part and an applied part. You can do the theory and then do the applied part in your own time to get certified.

Googling it brings up a few companies such as sixsigma.co.uk, knowledge acadamy, theleansixsigmacompany etc.

Whilst there are hundreds of Six Sigma training providers, there are few bodies for Six Sigma qualifications. The Council for Six Sigma Certification (CSSC), the International Association for Six Sigma Certification (IASSC) and the American Society for Quality (ASQ) are the main ones.
