If your speedo is geared for 750/16's then fitting 205/16s will mean that it will now over-read i.e you'll be going slower than your speedo indicates. This of course assumes that the speedo actually gives any sort of meaningful reading rather than just flickering around!
The 750's are taller which is an advantage when off-roading and climbing out of ruts and over obstacles. Steering will be easier with the smaller 205's as section width in contact with the ground is less, although you may not notice. Personally I think the 750's give a better appearance and steering seems to improve on the road when trying to keep it in a straight line.
I've had experience of the "diamond back" pattern tyres as I used them on a Disco (205 size) I off-roaded in for a number of years and found them unstoppable off road and horrendous on road! They make a real loud hum (even compared to other MT's) and braking is nerve racking at any sort of speed over 30mph. Unless you are using it off road very regularly then I would not recomment them as your only tyre for the Landy, and would consider something like the "classic" BFG Trackedge which is now available only as a remould as a very good all round tyre. Bronco make them and call them "grip dge" and they are 235/85/ size which is about the same as a 750/16 perhaps a little bigger even.
