Freelander Wheels 15x5" to 17x7.5" - but what tyre

Hello all,
I posted my thoughts on upgrading the wheels on a Freelander, so off I went to visit a friend who used to work as Director of Lotus Motorsport (Dave Cooling). He found me a nice set of Team Dynamics Mirage in the correct 5 x 114 PCD. I have not used any spacers so have not changed the offset from ET35, but I have gone 2.5 inches wider.
I will presume that I will have 1.75 on both the front and back faces, as offering them up does come close to the suspension upright, but some nice designer thought to recess the spring mounting to allow for bigger fitments it seems. I tried the car on full lock to see if I would get any rubbing trouble and its all looking good.
I did try these on the back also, again they clear.
Removing my front wheel revealed that it was rather bent on the inside edge, also the front tyres are just legal and due for a change. I want to improve the stance that this freelander has, the narrow tyres might be good for off road, but this one might see a grass field two or three times a year.
Now the maths...
I have 195/80 R15. Taking it to a 17" rim and taking the extra width into consideration, I have these options to make the speedo run true.
205/65/R17 within +0.72%
215/60 R17 within -0.43%
225/60/R16 within +1.3%
What tyres would you suggest make and pattern?

The 17" are for sale, I was offered a deal on a tyre and wheel package from Nene Valley 4x4. £975 for 5 NEW x 18" Genuine Landrover wheels and 5 x NEW Continental 235/55 18" Tyres. Now the tyres are not a budget brand either, I think thats stunning!!!!
