Im toying with the idea of engine swapping a classic mini, my first thoughts were something like a MK7 fiesta ST engine as there a punchy little 4 cylinder. I was wondering if anyone any more experienced could give me any advice on my first engine swap and common things to look out for during my project, all opinions and advice welcome.

It's not a cheap thing to do, but not uncommon. Lots of people have swapped Honda B16/B18 engines. Mighty car mods did a series on how do to it properly and it's pretty impressive.

Something I have always wanted was a z cars bike powered mini. Doesn't actually look too difficult, all things considered, and there's potentially money to be made as they seem to sell for £12-15k when done

I have a honda powered mini, about to get some love for the summer! Vtec on full attack in a mini is a pretty special thing. B16a2 and B18c4/5's can be found relatively easily and there are good amount of options to making it fit, and lighter than an A-Series. Mine is one of the early ones done with a Watsons Rally kit, but I don't think you even need to extend the front these days.
