78 ish on the guage, depends on what otter switch as previously stated. different sender for each as you are probably aware, so there is no fixed reading.
cool running kits / otters etc will lower the cut in point but will have a detrimental effect on the electrics...mine was running with both fans on even on the motorway - was giving it some though
water-wetter and a cut down plate have sorted this now, and the car now runs at 75 - 80, even on trackdays.

Mine cut in about 85 ish, ('96 Griff 500 with twin fans). They used to run all the time below about 40mph, just about holding the temp at a constant 90 degrees.
I had one of the fabelled front splitters refitted this summer (must have gone AWOL with the previous owner). Made a HUGE difference. Crusing the car now runs 10 deg cooler and the fans only cut in when sitting in traffic.

I had the otter switch swapped for a Tuscan spec one at the factory during the summer. Cuts in at about 90 and off at 86. Or it did for the first 50 miles then decided to stay on all the time once warm until it was replaced with another one.
Mine also seems to cut in earlier from cold, about 80, though whether this is just some mechanical characterstic or design feature not sure.
