When I removed the plenum cover, I found this connector floating about. It wasn't connected to anything and I can't see anywhere for it to connect. It's a three pin female, similar to the throttle potentiometer connector. It's not that though. It's on the passenger side. The car is a 1992 4.3 - any idea what it's for and whether it should be connected anywhere ?

More than likely it's spare.

Looks like it is probably the connector for the lambda sensors, and being a '92 Griff, presumably pre-cat so not required? The loom is based on a Range Rover but is probably redundant in your case.

It may well be a lambda connector as said but may also be the connection for the A/C compressor clutch if aircon is fitted. They are identical connectors.
