Bl**dy car! It did this to me last winter as well....
Whenever it gets close to freezing overnight, when I start the Golf in the morning it runs fine, then after a couple of seconds the info display on the dash flashes STOP! CHECK COOLANT! while beeping in a fierce, Germanic, "you're going to shag the engine" kind of way.
Lo and behold, every time I check the coolant, it's fine.

Any ideas?
A major pain as the car runs out of warranty in literally a week... and I'm out of the country right now...

It's a common problem on VAG cars. It will be the sensor on the coolant resevoir. Bad news is that it's part of the resevoir assembly and the whole unit needs replaced. Good news is that it costs less than £20.

You should be le o get it sorted under warranty especially as it's common problem.

common fault... can be fixed by the dealer, or the sensor can be replaced
