Mk 2 Golf 1.8 GL Carb probs

Hi All,
Have a prob with the Pierburg
carb on my 1.8.
When sat for a while, be it overnight or a few days, once started it runs quite rough.
If you gently accelerate it runs fine, but if you quickly accelerate it stutters - as it there is an air lock (?) or something. Once warmed up it's fine...
Not knowing much about these things, could anyone advise me as to what the problem could be?
I have a Weber to replace it with, would it be prudent to replace it with that?
