I get the feeling my battery (its Jaguar branded, so may even be the original) could be on the way out - a couple of times my touch screen has failed to activate - car kept outside throughout Scottish winter, so needing something with plenty power.

I am thinking of getting one of those stop/start batteries, such as this Yuasa https://www.tayna.co.uk/car-batteries/yuasa/ybx901...

Anyone use one of these batteries in this/similar car?

The standard advice in the Jag-specific forums is to go for an AGM battery.

I have been using Yuasa batteries for a while. I have them on a few of my cars and have had no issues with them. The one on my XKR 5.0 has only been on there a year and cost about £100. It fires up fine after being unused for a month. The one on my Bentley Turbo R is about 3 years old and the one on my regular Vectra a bit older and both seem fine to date.

I fitted a Varta AGM type to my 4.2 X150 and pretty much eliminated electrical gremlins immediately. Back then I was still managing one decent drive every week or two though, in addition to a number of short trips in the same time but that usage was enough to prevent electrical things like you have. Once the kids arrived and the opportunities for weekend blasts dried up significantly I found occasional electrical issues creeping back in.

If you can give it a bit of an Italian Tune-Up every week or two then an AGM type should be enough to keep gremlins at bay.

Varta or Bosch everytime , not convinced of using an AGM if not needed but it wont do any harm

Find out if it's a lead acid or agm battery and replace with like. Usually if it's in the engine bay it's lead acid, otherwise agm. They have different charging characteristics and some cars require coding if you switch from one to the other
