There are lots of good people out there for rebuilding Jaguar engines. Given that you're probably talking about JD Classic and you say CMC, I'm guessing you mean a classic XK engine.
There was a thread a few days ago about buying a complete 3.8 engine, a few people were listed there.
What are you intending to do with the engine? Racing it? Could affect who you want to use.
What sort of budget do you have? You might like to be sitting comfortably before discussing pricing with some of the well know companies.
Personally I mostly use Chris Window of Winspeed and there are several others on Piston Heads who've had Chris work on their engines. I've also had work done by CKL, they aren't as close to where I live, so not quite so convenient, but if I was after having an original D-Type rebuilt then I'd be down there, I doubt anyone knows more about D-Types than Chris Keith Lucas. I think most of the XK racers have their engines built by Peter Lander of Sigma Engineering. My engine was actually built by Ike Welhausen originally. I've not used CMC personally but I have discussed a few project with them, and been to seminars there and it's another very impressive setup. I've not dealt with JD Classics, the cars on their show stands have left me cold, they were so over restored they looked like all the life had been erased from them, but that's just my personal taste.
As to costs, well that's a how long's a piece of string question. Costs will vary depending on many things. Do you want to just replace the bare minimum or do you want to rebuild with the C&G bolts which are measured with a micrometer during tightening (a torque gauge is only a proxy for what the nut and bolt are really experiencing) and cost £35 a pop (sorry I haven't seen their price list of quite a number of years, they might have gone up) and at that rate there are a lot of bolts holding a XK together.
I believe that VSE are much the biggest player in the rebuilding Jaguar engines market. IIRC Lowdrag had them rebuild the engine for his E-Type, perhaps he'll be along soon and can say how he's getting on with it. Depending on what you ask CMC for I believe they use (or have used in the past) VSE for some of their engine work. Search back for a thread called " E-type déjà vu. The second rebuild" from Oct 2013.

Editted: Somehow I forgot Bozwell who sometimes blesses us here with his company. He built Lowdrag's XKSS' engine and sorted mine when it was first installed into my XK150.

Your profile says you're in Kent. CMC is quite a trek, CKL are at Battle near Hastings and Winspeed are near Guildford.
