Temperature Gauge / Warning Light on Clubsport

Out at Snetterton today and for first time since getting the car I had a dry track.
Starting to love this car...
Once I got into my stride the temperature was running well at around 85 - 88 but then in third session of the morning after about 10 laps the red warning light started to blink on - then later that lap (just as I was by the pit entrance) it came on full and the temperature reading jumped to 105.
Dived into the pits - engine cover off but no sign of leaking water - oil fine (it was changed for the day). Stuck my calibrated electronic temperature probe into swirl pot - it read 85 whilst the dash was reading 100+....red light still on.
Checked wiring all okay - removed the sensor - replaced and all readings returned to normal.
Car ran fine for another 3 sessions (10 - 15 laps each) with normal temperature shown on the dash and NO red lights.
So did I develop a bad earth / connection on the sensor or do I have a faulty sensor?
Any thoughts?
