I have no direct experience of cable operated paddles, but years of long circuit karting with a direct link between the gear lever and gear change (which needed a pretty firm pull or push) and with motorbikes which could make your toe sore after lots of gear changes, suggests that the cables would be a bit of a struggle. Throw in the cable friction and the routing between the wheel and the gearbox and it might also be difficult to keep them adjusted.
The pneumatic systems also have an "auto blip", so changing gear is just a doddle, but you would need to be using the clutch on downshifts with the added risk of shifting into too low a gear and locking the wheels or buzzing the motor.
