The most powerful was the 190, then the 180 (which is an auto) and finally the 160. I would think the 190 is the most fun; you only get a couple of mpg less than the 160 (official figures) and it looks to be in the same tax band.
I'm not sure if any of the engines suffer problems that the others do not - you are probably best looking at http://forums.mg-rover.org/ to check.

Spent a lot of time researching this before buying a tourer 190+ last week.
Basically you're looking for a decent service history, cambelts having been changed (£500 job in a garage if not) and make sure there's a decent "kick" in power delivery about 4000 revs.
Oh.. and to answer the actual question, 190 is the one to go for in my opinion

i went for a kv6 160 , simply because the 190 has lower gearing and feels buzzy at motorway speeds whereas the 160 feels more relaxed. i love mine , i've had the cambelts /thermostat/fan(new 2 speed)/exhaust replaced and had new vis motors fitted in nov '10 , so there was a fair bit of outlay
but it's a great car to drive.....
ps might be for sale to finance yet another motorbike....
