Throttle cable adjustment

Basic question. How much slack should there be in the throttle cable? Basically, if I wiggle the cable under the bonnet, there's loads of play in it, as also evidenced by the fact that I can lift the pedal about an inch or so with my foot before it comes up all the way.
Question is... does this mean that I'm never actually getting full throttle because there's too much slack, or has the cable been lovingly adjusted by my ex-dealer to ensure that with foot flat, the throttle is fully open without risk of snapping the cable?
Is the only place to adjust it that huge nut in the inaccessible place behind the plenum chamber and under the cheesecutter grille by the windscreen?

Basically press throttle to floor and you should here a metallic click when the butterfly hits its stop. If not, then you are not getting full throttle.
Adjustment is by the big nit thingy by the plenum. Also chcek that the cable end is attached by a clevis pin and split pin and not a nut and bolt. The nots and bolts have this habit of coming undone!

Very easy to check. All you need is a friend or the wifey to help you. Tell her to sit in the car with the engine off and apply full throttle. You then check under the bonnet if you can open the throttle mechanism any further by hand (needs a bit of force since the spring is quite strong). If you can, adjust the cable until it fully opens.
