Does anybody have a problem with their foot pushing on the accelerator shaft rather than the pedal plate?

I'm guessing that either I'm sitting too close and therefore my foot is postioned such that the heel is under the brake and the toe is over the accelerator (making heel'n'toe a bit difficult). With the toe over the accelerator in this way it makes the contact point on the shaft, OR is the pedal height is too low.

Do you guys have it level with the brake pedal?

Also, how do you adjust the pedal? presumably screw in the adjuster screw at the top of the accelerator but do you need to do anything at the engine end? Perhaps the soon to be AAOC owners guide may have a section on pedal adjustments.

We had the pedal repositioned a bit further away by the factory, since Max found heel and toeing a bit awkward. Probably same issue.

Shortly there will be a thing on the owners club site about brake set up, which includes pedal position. You may want to adjust that before tinkering more with the accelerator. The brake pedal should be vertical on first pressure. Gives a lot more feel. This can mean the accelerator is closer to the driver relative to the brake pedal than now. That may help or hinder your prob.
