What do you do?

It's easier in a car but when you've got someone who wants to test drive your bike, which is a perfectly reasonable request and you've asked them if they're insured how do you proceed?

Can they be insured to test ride your bike?

How can you accompany them if they've come to test ride the bike. Would you insist on riding pillion, or would you make them ride pillion?

I've always said that if someone wants to ride a bike I'm selling they need to bring the full asking price with them as a deposit and leave it with me when they ride the bike.

When Iv bought a bike the first time I was allowed on them was after I had paid.
And that had to be cash.

Agree with dern, i never let anyone take a bike for a run without cash in front of me. However i have left a car (without the keys) with a seller as security while i have taken a bike on a test run.

and what use is a car locked on the drive, with no V5? its not like you could sell it, or stop the guy sneaking back over night and driving off?

nope the only safe answer is full cash, no cheques, or send him packing to the nearest dealer if he wants to just try it.
eg if he fancies an R6, but has never ridden one, yours shouldnt be the first. the test should only be to confirm it behaves and runs as well as the shop one did the day before.
