Holiday plan thro' the Alps / Dolomites passes

I have been tasked with planning next years euro trip for our group, and I had the idea of doing some passes - Timmelsjoch etc.
We will go for 9 days, (over 2 weekends), dates are open presently, and to save me starting from scratch and making any big mistakes (like going before they are open) has anyone got any hints or route ideas that led to a successful trip in the past?

All the planing is already done. All you'd need to do is book the hotels and the crossings.
The days were intense but none of the group felt it was too much
