St. Malo would be my pick, because it's a pretty little town and then off into Brittany. But I have family nearby, so I'm biased. The northern coast is super pretty, especially in the summer. I'd head off towards Erquy and then maybe cut across to Quiberon or Belle Ile.
I have a great friend who moved to England when she was 17 who was born in St Malo, so it's a good shout! The route that works for me usually is overnight to St Malo and return overnight from Caen, great for anywhere on the west side of France, gives two overnight stops to allow for long journeys on each side (we live in Scotland). Significant benefit of avoiding London and Paris. Used that route earlier in the year to ride down to Spain and back.
Just came back from a car trip which started with my first visit to Brittany, agree that it's a lovely area, but know that we got lucky with the weather. Will visit again as loads to do. From there we took the bridge over the Loire at Saint-Nazaire; I love the Loire area around Saumur, it's idyllic and day-tripping to Le Mans is easy (handy). We had lunch in La Rochelle and ended up in Bordeaux (for the wine festival ). Cool visit to the Dune du Pilat, one of those amazing places, and a potter along the coast back towards Bordeaux was fun. We ended the trip near Sarlat, the Dordogne would be great on two wheels, and it's close enough to get back to Caen for the overnight ferry without needing a stop over. The Auvergne is also close enough to Caen, I found the area near Murol stunning as a teenager, but that was a long, long time ago!
