Classic / Retro bike circa 5k - tinkering,classic TD and fun

After a few years lay off I am looking at getting back into biking.
Just before the lay off my last bike was a Dook Desert Sled, very cool but far too heavy for what it was. I test rode a RE Conti 650 and thought it was cracking bike but went for the Sled because it looked better!
I also owned a '59 Triton and found it a bit frustrating because the tech was so far behind what I was used to working on and the riding position was horrible.
Ideally looking for something that would happily grind pegs on decent rubber for an occasional classic trackday with a comfortable riding position. needs to be relatively light weight.
possibly a classic supermoto, TDR 250 or something more modern like a Ducati Sport GT1000 (I had a Sport Classic for a while) or a Moto Guzzi V7 prepped like the one make series (I believe the newer stuff is still eligible for classic track days)
any thoughts peeps?
