The Ron Haslam days were the only ones where you could rock up with nothing and they'd kit you out entirely, as far as I'm aware.
As has been mentioned, there's Smallboy for bike hire and I also noticed a Yamaha affiliated experience/tuition thing at a few UK track days last year but I'm not sure if they provided kit as well as the bike.

Done the Ron Haslam one a couple of times. Was a good day out and everything provided. It's a few years since the last time, but I remember you had to do at least one day on the 600s before they let you take the 1000. Was a great school. Such a shame Honda pulled the plug on leasing the bikes to them. lukeyman said:
