Recommend a great bike tour

Have some time off between jobs so I've been looking for a bike tour somewhere warm!
Something like an extended version of the NC500 with nice roads, good scenery and a place to hire a bike that won't bankrupt me, that's warm in Feb-April. 1-2wks long at 3/4hrs a day riding?
I'll be solo, so prefer on road but some easy off road would be fine.
Looked at Route 66, but maybe a bit early in the year for that, and roads maybe a bit boring?
The Big Lap of Oz but that's a bit excessive at 9k miles!!! Could maybe do a portion of it though.
Still a bit early for nice weather in Southern EU I think?
Which awesome trips have you been on that you'd recommend?!

Francesco does some awesome tours, we did a bespoke one with him around northern Italy, just into Tuscany and around the Barolo region, all the guys who did it are still raving about 4 months later!

Also the wet season for the northern parts of the country which would rule that out.With your timeframe you could easily do Melbourne to Sydney through the Victorian High Country, across the Snowies in to Canberra, explore out through Abercrombie River/Oberon to Bathurst then in to Sydney without having to do big days. Plenty of good day rides around Sydney as well. Then from there if you had more time keep going up north via the inland routes - noting however you would be having to navigate around some flood damaged roads and towns as you get to the northern rivers.

This is on my list, there are a few bike hire companies in Cape Town which will provide you with a bike, luggage and basic protective kit. There are a lot of 2-3 day routes around the area. One of the bike shops said they even provide a pre-programmed sat-nav and can book accommodation for you but that seems a bit excessive ? I was thinking of renting an Air b&b and spending a few weeks there working most of the time and having long weekends touring.

Thanks, that was an interesting read. I have been to Chile and Argentina, rented a car in Chile travelled to the same places on day trips out of Santiago. I was back there over in the last month, and did think would be a good place to do a bike tour, but was busy with other things to look into it in great detail.
