My Wife's driving license has a date beside AM and A but nothing by A1 and A2. It appears She can ride anything without L plates or CBT. Surely this can't be true as She's only ever ridden a moped when She was 16 and driven a car since She was 17. She's 55 now.

The date next to the A/AM will be for her provisional A licence.

She'll be able to ride a 50cc without taking a CBT due to passing her driving licence prior to February 2001. Above a 50cc she'll need her CBT which will be valid for two years at a time. Then allowed to ride up to a 125cc. If she takes her full bike test before the two years is up, she wont need to do a CBT again.

This might clarify the group entitlements.

My wife got quite excited about her A & AM until she realised it was all provisional or limited to tricycles.

Thanks for the clarification. That's what I thought it must mean but the DVLA site is not clear.
