More E34 problems (cooling & gearbox)

My 1991 525 is using coolant, about a litre a week.

There is no obvious signs of a leak, and no obvious signs of H/gasket failure, so where could it be going?? It never goes above half way on the temp gauge, but when the heater warms the car up before I've even selected in the red. And it stinks aswell. A cross between old coolant and urine

And when I drop down a gear (usually into 2nd) I can hear a whirring noise until I release the clutch pedal? Is this the release bearing? As they normally chatter in neautral dont they?

And its very rare I can engage first whilst in motion without some form of crunching

If you can smell coolant in the car check the heater matrix and pipes to it.
You will need to partially strip it down to see which type it is anyway as there are a couple of types.
